Raw Flax Seed Crackers

Ingredients

1 cup whole flax seeds
1.5-2 cups water
2 tbsp tamari
2 tbsp Herbes de Provence
¼ c sundried tomatoes, sliced in small pieces
sea salt, to taste
cracked black pepper, to taste

Instructions

Soak flax seeds in water for 1.5-2 hours until they absorb all the water but are not too watery. Slowly add addition water if mixture hardens. Add tamari, sundried tomatoes and herbs. Spread even layer on non-stick dehydrator tray and dehydrate at 110F. After 4 hours, flip like a pancake and dehydrate for an additional 2-3 hours. Cut into smaller crackers and complete dehydration to desired consistency.

These flax crackers are the perfect snack for the work day’s afternoon slump or an airplane/road trip snack. Their omega 3 fats are essential for optimal circulation and mental acuity but are easily damaged by heat so make them in a dehydrator and store in a cool place. To create real indulgence, enjoy with this white bean puree or zucchini hummus.
