Papaya, Endive and Crab Salad

Ingredients

  • 3 tbls fresh lime juice
  • 2 tbls EVOO
  • 1 tsp grated peeled fresh ginger
  • pinch of sea salt
  • 1 cup papaya, cubed
  • 2 Belgian endives, cut into match-sticks
  • 1/2 cup of continental cucumber, thinly sliced
  • 3/4 cup jumbo lump crab or lobster

Instructions

Whisk together ginger, lime juice, EVOO and salt in a  large bowl.  Add diced papaya, endive, cucumber and crab.  Toss gently.  Serve immediately.

I spent last week immersed in detoxes for an interview with Dr Steve on cleansing programs. If you missed the segment, here it is.

Inspired by “getting clean”, I’ve decided to follow my own detox program for the next 12 days. It’s a simple concept – drink a detox smoothie for breakfast, followed by vegetables and fish for lunch and dinner. All organic and/or wild. No alcohol, caffeine, dairy, gluten, meat, soy or sugar. The hardest part for me – skipping the de rigueur AM coffee.  But, I’m reminding myself it’s only 12 days and green tea is a substitute, albeit a poor one, but at least it’s hot.

The papaya, endive and crab salad will be my dinner tomorrow night and lunch on Tuesday.  I’m an advocate of cook once, eat twice and this dish will hold until the next day. If anybody else wants to join me in the detox, call my office for the detox powder – 212 213 8520.
