Cabbage and Avocado Salad with Hemp Seed, Mint and Cilantro

Ingredients

  • 3 cups purple and green cabbage, shredded
  • 1/2 red pepper, diced
  • 1/2 yellow pepper, diced
  • 1/2 avocado, diced
  • 1/4 red onion, diced
  • 1 tbl hemp seeds
  • 3 tablespoons loose cilantro leaves 
  • 3 tablespoons loose mint leaves 
  • pinch of sea salt
  • 1 tbl hemp oil
  • 1/2 tbl lemon juice

Instructions

Toss all the vegetables, hemp seed and herbs together.

Mix the hemp oil, lemon juice and sea salt together in a small glass.

Immediately before serving, pour dressing over the salad.
