Drink Your Greens: Cucumber, Fennel and Lime


  • 1/2 organic apple
  • 1/2 small fennel bulb
  • 1 cucumber, peeled & chopped
  • 4 kale leaves
  • juice of 1/2 lime
  • water, as required


Add all ingredients to a powerful blender such as a Vitamix. Blend for 1 minute.  If required, add water to thin the juice.  The juice can always be strained but I like it thick.  Drink immediately.

Even on a rainy New York morning, I’m up for a green juice. They are enzymatically charged shots of green goodness loaded with phytonutrients,  chlorophyll, magnesium and potassium. They help oxygenate the blood, enhance vibrancy, boost mental acuity and produce peachy perfect skin.

But what if you don’t own a juicer or are tired of the ubiquitous green juices from Organic Avenue, Blueprint and Terri’s? Grab your blender and make your own.

This is one of my favorites – cucumber, fennel, apple, kale and lime juice. The fennel gives a minerally touch while the lime pulls all the greens together. You can add water to thin the juice and even strain it if you don’t like the pulp.  I like a thicker juice, so prefer a blended version (and it retains all of the fiber too).

Why would anyone eat energetically dead and sugar-laden cereal?
